Easy Strawberry Shortcake with Homemade Whipped Cream

Home Grown StrawberriesThe strawberry is one of my favorite fruits. Fittingly, my house came with a small strawberry patch in the back yard. In past years, it hasn’t produced much fruit, and the plants had seemed to die off. In fact, I had given up on it. But this year, the plants are thriving! The strawberry patch has already yielded two bowlfuls of fruit with more on the vine.

Strawberry Shortcake: My Favorite Dessert!

My favorite recipe has been adapted from the back of the Bisquick box. Made with low fat Bisquick baking mix, skim milk, and honey, it is a light dish. I usually top my strawberry shortcake with light or fat free cool whip. But this time I thought I’d try something a little different. I recently purchased a KitchenAid Stand Mixer and have been enjoying trying new recipes–I decided to try making homemade whipped cream.

How to Make Homemade Whipped Cream

How to Make Whipped CreamSince this was my first attempt at making whipped cream, I did extensive research before giving it a try. The experts recommended using very cold (but not frozen) cream and chilling the bowl and whisk for best results. I followed their advice, and the results were excellent! Never again will I buy a can of whipped cream–homemade is so much better.

I’ve had my whipped cream stored in an airtight container for over a day now, and it has remained whipped. The cream can be re-whipped if necessary.

Strawberry Shortcake

Serves 4

Cook time 12 minutes

Ingredients

  • 1 pint strawberries (sliced)
  • 1 cup Bisquick Baking Mix
  • 2 tablespoons Honey
  • 1/3 cup skim milk
  • whipped cream for topping (recipe below)

Directions

Step 1

Preheat oven to 425F.
Step 2

Stir Bisquick, honey, and milk until soft dough forms.
Step 3

Drop onto parchment topped baking sheet, forming 4 cakes.
Step 4

Bake 10-12 minutes until golden brown.
Step 5

Cut shortcakes in half.
Step 6

Top bottom layer with sliced strawberries.
Step 7

Top with a spoonful of whipped cream.

Add second half of shortcake.

Top with additional strawberries and whipped cream.

Homemade Whipped Cream

Serves 12
Prep time 30 minutes
Cook time 6 minutes
Total time 36 minutes

Ingredients

  • 1 cup heavy cream
  • 1/2 teaspoon vanilla
  • 3 tablespoons sugar

Note

Preparing fresh whipped cream is a cinch when using a stand mixer. For best results, chill the mixer bowl and wire whisk in the freezer for about 30 minutes. Place the cream in the freezer for about 15 minutes to chill thoroughly, but be be careful not to let it freeze.

Directions

Step 1
Add cream, vanilla, and sugar to mixer bowl.
Step 2
Homemade Whipped Cream
Using wire whisk, turn to speed 2 and whip about 1 minute. Cream will start to bubble slightly.
Step 3
Homemade Whipped Cream
Increase to speed 4 and whip for another 1-2 minutes. Cream will begin to thicken.
Step 4
Homemade Whipped Cream
Increase speed again to speed 6 and whip about 1 minute as cream thickens.
Step 5
Increase to speed 8 and whip 1-2 minutes, until stiff peaks form. Whipped cream can be refrigerated in an airtight container for several days.

  1. I love strawberries and this looks delicious. We have a few strawberry plants, hopefully we’ll have enough berries to make this.
