Spaghetti Pie – An easy recipe for Pi Day

Spaghetti Pie – An easy recipe for Pi Day

We have spaghetti for dinner at least once a week in my house and occasionally we make more than we can eat at one time.  Do you have leftover spaghetti that you need to use up?  Here’s a simple recipe that will take that spaghetti and transform it into an entirely new dish, spaghetti pie.  This may just become a new dinner favorite.

Slice of Spaghetti Pie

In addition to using up leftover spaghetti you can also use up other leftovers at the same time.  Try replacing the canned tomatoes with whatever cooked vegetables you have in the refrigerator.  I’m looking forward to this summer when we have more zucchini around then we know what to do with, some of it will be ending up in one of these pies.  If you like meat sauce with your pasta then mix in some leftover chile or chopped cooked meatballs.  The possibilities are endless!
