Rustic Garden Tomato Pie with Easy Pie Crust

Garden Tomato topped macaroni & cheese with panko bread crumbsI’ve been able to supplement our garden’s tomato production with boxes of 6 tomatoes for $1 from a local farm stand. The challenge has been devising ways to use all 6 tomatoes before they spoil. Last week I shared a recipe for Macaroni and Cheese topped with garden fresh tomato.

This week I thought I’d share another great recipe that we devised. This rustic tomato pie is very easy to make. Serve with a fresh-baked croissant or fruit cup for breakfast, or serve alongside a fresh garden salad for lunch or dinner .

Since purchasing a Kitchenaid Stand Mixer a few months back, I’ve discovered how easy it is to make many more items from scratch then I have in the past. For my tomato  pie, I made a simple homemade pie crust. No time to make a crust? Use a pre-made refrigerated or frozen crust, no need to thaw!

Easy Pie Dough

Serves 1

Ingredients

  • 1-1/4 cup flour
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 8 tablespoons cold unsalted butter (cut into 1/4 inch cubes)
  • 3 tablespoons cold water

Directions

Step 1
Basic Pie Dough Recipe. Easy to make in less than 10 minutes with a stand mixer.
Stir together flour, sugar, and salt in the mixer bowl.
Step 2

Cut 1 stick of cold butter into 1/4" cubes

Add butter and toss to coat with flour mixture.

Using the flat beater, mix on medium-low until the texture resembles coarse cornmeal.

Add water and mix until the dough pulls together.

Transfer dough to a floured work surface and form into a ball.

Lightly flour the dough ball, then flatten with 8 gentle taps of the rolling pin.

Roll out dough round until about 1/8" thick and 12" in diameter. Press into greased pie plate.

If your recipe calls for a pre-baked pie shell, bake 10-15 minutes at 425 or until golden brown.

Ingredients

  • 1 pie crust (unbaked)
  • 2-3 tomatoes (sliced)
  • 8oz cooked ham (diced)
  • 1 Small onion (sliced)
  • 1 tablespoon spicy brown mustard
  • 1 cup cheddar cheese (shredded)
  • 2 Large eggs
  • 1 tablespoon butter (melted)
  • 2/3 cups milk
  • 1 tablespoon fresh basil (chopped)
  • 1/8 teaspoon ground pepper

Directions

Step 1

Saute ham and onions over medium heat until ham is browned, about 5 minutes.
Step 2

Brush bottom of unbaked pie shell with mustard.
Step 3

Sprinkle with 1/2 cup cheese.
Step 4

Spoon ham mixture evenly over cheese.
Step 5

Layer tomatoes on top of ham mixture.
Step 6

Beat egg, milk, and butter with a fork until blended. Pour over tomatoes.
Step 7

Sprinkle with basil, pepper, and remaining cheese. Bake at 425 for 25-30 minutes or until lightly browned and set. Cool 20 minutes before serving.

Be creative with this recipe! Try substituting swiss or mozzarella cheese for cheddar. Add in sliced mushrooms, bell peppers, or a jalapeno pepper for a bit of spice. Prefer a sweet dish? Use honey mustard or Dijon mustard rather than spicy brown.
