Homemade Apple Pie Recipe

My favorite dessert is pumpkin pie (if you missed it here is my recipe for Orange Pumpkin Pie) but my second favorite dessert is apple pie.  I love the simple combination of apples, cinnamon, and sugar, and wrapping it all up in a light flaky crust just makes it that much better.  I think the best time to eat a homemade apple pie is when it is still warm from the oven but they are still delicious after a short stint in the refrigerator (in this house a fresh pie never lasts for more than a few days).  Here is a simple recipe for a homemade apple pie with a double crust.

Ingredients

  • 2 1/2 cups Flour
  • 1 cup Butter
  • 1 teaspoon Salt
  • 1/2 cup Ice Water
  • 6-8 Medium Apples
  • 2 tablespoons Lemon Juice
  • 1/2 cup Sugar
  • 1/4 cup Brown Sugar (packed)
  • 2 tablespoons Flour
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1 tablespoon Butter

Directions

Step 1
In large bowl mix 2 1/2 cups flour and salt.
Step 2
Add 1 cup butter and blend with pastry blender or two knives until butter is in pieces no larger than peas.
Step 3
Add ice water 1 tablespoon at a time until dough starts to hold together.
Step 4
Form dough into two disks and wrap in plastic wrap. Chill for at least 1 hour.
Step 5
Preheat oven to 425 degrees. Spray a 9 inch pie plate with nonstick cooking spray.
Step 6
Core and thinly slice apples. Mix with lemon juice.
Step 7
In small bowl combine sugar, brown sugar, 2 tablespons flour, cinnamon, and nutmeg. Add sugar mixture to the apples and mix well.
Step 8
Roll out one disk of dough on a lightly floured surface. Transfer to pie plate and trim edges.
Step 9
Place apple mixture in pie plate and dot with butter.
Step 10
Roll out the remaining dough and place it over top of filling. Trim edges, tuck under bottom crust, and flute. With a sharp knife cut 4 slits in the top crust.
Step 11
Wrap strips of aluminum foil around the pie to protect the edges. Bake at 425 degrees for 30 minutes. Remove foil and bake for an additional 15 minutes.
