Homemade Alfredo Sauce with Broccoli and Chicken

For dinner tonight I decided to try making a homemade alfredo sauce.  This was my first time making a white sauce and I used Greek-style yogurt instead of the more traditional heavy cream in an attempt to lighten up this dish.  I also added chicken and broccoli to give it a little more color and texture.  I think next time I will also add chopped onions.  There was nothing left after dinner tonight,  everyone liked it!

Homemade Broccoli and Chicken Alfredo


  • 3 Chicken Breasts
  • 3 cups Broccoli Florets
  • 1/2lb Pasta
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic (minced)
  • 2 tablespoons Flour
  • 1 cup Chicken Broth
  • 1/4 cup Greek-style Yogurt
  • 1/4 cup Milk
  • 1/4 teaspoon Pepper
  • dash Ground Nutmeg
  • 3/4 cups Parmesan Cheese


Step 1
Cook the chicken breasts and cut into bite-sized pieces.
Step 2
Cook pasta according to package directions. Add the broccoli for the last 2 to 3 minutes.
Step 3
Meanwhile in a large skillet heat the olive oil and garlic over medium heat until garlic is golden. Add the flour and stir until smooth.
Step 4
Gradually add the chicken broth, yogurt, and milk, stirring constantly. Add pepper and nutmeg.
Step 5
Bring the mixture to a low boil then reduce heat and simmer until sauce thickens. Add the Parmesan cheese and mix well.
Step 6
Add chicken, broccoli, and pasta. Toss to coat and serve.

If you don’t like broccoli try substituting another green vegetable like lima beans, spinach, or asparagus.  What are you going to add to this dish?
