Easy Mexican Potato Casserole

Easy Mexican Potato Casserole

Mexican Potato CasseroleI would often pick up a 5lb bag of potatoes on special and run out of things to make with them, until I found this recipe. Modified from an old church cookbook, this casserole is easy to make and freezes well. Try topping with sour cream or bacon bits for added Mexican flare.
