I would often pick up a 5lb bag of potatoes on special and run out of things to make with them, until I found this recipe. Modified from an old church cookbook, this casserole is easy to make and freezes well. Try topping with sour cream or bacon bits for added Mexican flare.
Preheat oven to 425 degrees. Place cubed potatoes into greased casserole dish. Stir together melted butter and taco seasoning, then pour over potatoes and stir to coat. Bake for 30-45 minutes until potatoes start to crisp, stirring every 10 minutes.
Step 2
Sautee beef, onion, garlic, and peppers until soft. Drain.
Step 3
Stir in tomatoes and beans.
Step 4
Pour beef mixture over potatoes.
Step 5
Top with grated cheese. Bake for 10 minutes, until cheese is bubbly.
